Method
Slice the cucumber and half the red onion into the vinegar and leave them to pickle; this replaces the jar of gherkins.
Work the egg, breadcrumbs, paprika, pepper and the rest of the onion, chopped fine, into the turkey.
Heat the oven to 400°F (200°C). Divide the meat into eight and press each against the back of a ladle into a basket. Set them on a lined half sheet pan.
Fill each with ricotta, halved tomatoes and a little of the drained pickle, and scatter the mozzarella over.
Bake 25-30 minutes, until the meat is firm and the cheese blisters. Toss the cabbage with the rest of the pickle while they bake, and serve both on the warm rice.
