Method

  1. Heat the oven to 350°F (175°C) and line an 8 by 4 inch loaf pan.
  2. Dice one pear and coarsely grate the other; the grated one keeps the loaf damp. Slice a third pear into thin fans for the top.
  3. Beat the egg, kefir and date syrup, then fold in the buckwheat flour, the cardamom and the baking powder; buckwheat is what makes this loaf dark and nutty rather than another sponge.
  4. Fold the pears and most of the walnuts through, scatter the rest on top and bake 35-40 minutes, until a skewer comes out clean.
